Easy Weeknight Dinner

This weeknight dinner of baked garlic parmesan chicken, blasted broccoli and roasted Yukon potatoes is super easy and really delish!  Because the potatoes and the chicken are baked at the same temperature you can cook them simultaneously and voila! Dinner is ready!

Blasted Broccoli

Ingredients:
  • 2 heads of broccoli, divided and stems removed
  • 2 T olive oil
  • 1 T red pepper flakes
  • 1 T seasoning salt
Directions:
  1. Preheat oven to 500 degrees
  2. Toss broccoli with olive oil and put on cookie sheet
  3. Sprinkle red pepper flakes and seasoning salt over broccoli
  4. Bake at 500 degrees for 8 minutes (not a minute longer!) Broccoli will be slightly browned at the edges and a little crispy.

Skamania Weekend

Our anniversary trip to Skamania was amazing...barely any traffic on Friday night, giant suite upgrade, hot tubbing, Christmas caroling, peppermint schnapps hot cocoa drinking, breakfast buffet eating, snuggling and Christmas movie watching (Elf!).

A Weekend Getaway

I am beyond excited to head down south to Portland tonight with Paul for a relaxing weekend.  We'll be staying in PDX tonight and then heading over to the Skamania Lodge Saturday to check out Multnomah Falls and bum around Hood Canal.  And did I mention there is an outdoor hot tub? Can't wait...

Holly Jolly-ness

I rang in the holiday season this weekend with a girl's night out at the Nutcracker on Friday after work (thanks Chris!), the annual Edmonds Tree Lighting on Saturday and decorating the Christmas tree on Sunday.  In between there was a lot of shopping, Fireball, holiday movie watching and eating.  I love the holidays!
